The holiday falls between late November and late December of the secular calendar and has a joyous overtone.<\/p>\n<p>Commemorating the time when the Maccabees (Jewish rebels who had defeated the Syrians occupying Judea) had only one day&#8217;s worth of oil left to burn during a ritual cleansing of their ruined temple, to their surprise the oil miraculously lasted eight days.<\/p>\n<p>The miracle of the Chanukah oil is celebrated by the lighting of a special menorah (an eight branched candelabra). The first night one candle is lit leading up to the eighth night when all eight candles are lit. Traditionally songs are sung by those taking part, <a title=\"Dreidels\" href=\"http:\/\/en.wikipedia.org\/wiki\/Dreidel\" target=\"blank\">dreidels<\/a>\u00a0(spinning tops) are spun for fun and delicious foods are eaten.<\/p>\n<p><iframe loading=\"lazy\" width=\"1080\" height=\"810\" src=\"https:\/\/www.youtube.com\/embed\/tNmmSXZ6WDg?feature=oembed\" frameborder=\"0\" allowfullscreen><\/iframe><\/p>\n<p style=\"text-align: center; font-size: 13px;\">The amazing PS22 Choir from Staten Island singing a Hebrew Chanukah Song<br \/>\nConducted by Gregg Breinberg<\/p>\n<p>Hanukkah traditions include special foods prepared. Sufganiyot (doughnuts in English) are eaten. Popular with the kids, you can buy them with a range of different fillings. Latkes (potato pancakes in English), a fried mixture of grated potato and onion served with sour cream or thick cream cheese and sometimes apple sauce.<\/p>\n<p>Here is one of my favorite Latke recipes:<\/p>\n<p>[\/et_pb_text][et_pb_text admin_label=&#8221;recipe blockquote&#8221; background_layout=&#8221;light&#8221; text_orientation=&#8221;left&#8221; use_border_color=&#8221;off&#8221; border_color=&#8221;#ffffff&#8221; border_style=&#8221;solid&#8221; saved_tabs=&#8221;all&#8221;]<\/p>\n<blockquote>\n<h2><\/h2>\n<h2>Potato Latkes<\/h2>\n<p><em><strong>Ingredients<\/strong><\/em><\/p>\n<ul>\n<li><em>1 pound potatoes grated<\/em><\/li>\n<li><em>1\/2 cup finely chopped onion<\/em><\/li>\n<li><em>1 large egg, beaten<\/em><\/li>\n<li><em>1 tablespoon of self-raising flour<\/em><\/li>\n<li><em>a pinch of salt<\/em><\/li>\n<li><em>a pinch of pepper<\/em><\/li>\n<li><em>oil for frying<\/em><\/li>\n<\/ul>\n<p><em><strong>Preparation:<\/strong><\/em><br \/>\n<em>Peel potatoes and grate by hand. Transfer to a large bowl of cold water. Cook until undersides are browned, about 5 minutes. Turn and brown on second side. Song festivals, musicals and children&#8217;s theatre are featured heavily over this holiday. The holiday often coincides with Christmas celebrations taking part around the country.
